It testifies to the happy result of Sauvignon’s adaptation to the Mediterranean climate of the limestone hills of the Castel del Monte DOC area. The grapes are harvested in the second decade of August and vinified at a controlled temperature to obtain the maximum aroma typical of this vine. It presents itself to the nose with an intense character typical of the variety; the palate is dry, fresh and with a balanced and very persistent bouquet that is enhanced with seafood appetizers and fish-based dishes.
