Scariazzo is made from Fiano grapes; this variety, originally from the Irpinia area, was known as the Apiana grape (Bees Grape), since bees (api) preferred it for its sweetness. The vines are carefully selected and the wine is made according to Rivera’s long experience and its determination to maintaine authenticity and the real expression of its variety and its terroir. The grapes are harvested in the last week of August meeting an optimal phenolic ripeness.The must ferments at a controlled temperature, 20% in new Allier oak barriques and the remaining in stainless steel tanks.
